Recipe of the day

Apple Butter Pumpkin Pie:
Apple butter lends its fruity flavor to this harvest pie. If you have pumpkin pie spice on hand, use 2 teaspoons of it in place of the cinnamon, ginger, and nutmeg called for in the recipe. To make the leaf decoration shown here, prepare pastry for a double-crust pie.
RECIPE INGREDIENTS
1 cup canned pumpkin
1 cup apple butter
1/3 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3 eggs
One 5-ounce can evaporated milk (2/3 cup)
1/2 cup milk
Pastry for Single-Crust or Double-Crust Pie
whipped cream (optional)

DIRECTIONS
In a large mixing bowl combine pumpkin, apple butter, sugar, cinnamon, ginger, and nutmeg. Add eggs; beat lightly with a rotary beater or wire whisk till combined. Gradually stir in evaporated milk and milk; mix well.

Prepare and roll out pastry as directed. Line a 9-inch pie plate with pastry. Trim and crimp a high pastry edge or attach leaf-shaped cutouts. Pour pumpkin mixture into pastry shell. To prevent overbrowning, cover edge of pie with foil. Bake in a preheated 375 degrees F oven for 25 minutes. Remove foil and bake about 25 minutes more, or till a knife inserted near center comes out clean. Cool on a rack for 1 hour. Chill 3-6 hours before serving. Store in the refrigerator. If desired, serve with whipped cream.

Thoughts on today's verse
Jesus reminded us to "pick up your cross daily and follow" him. The way of truth is a daily choice. To not choose God's way, to not intentionally seek to put him at the center of our life and as the top priority in all of our decisions, is to slip a little bit further away from the life he calls us to lead. Lack of a decision is a decision to not follow.
Prayer:
Heavenly Father, I choose to follow you and your truth today. Open my eyes so I may see your truth and open my heart that I may live it. I decide today, again, to follow, you with all my heart, soul, mind, and strength. In Jesus name I pray. Amen.

Recipe of the day

Try not to think about the toeless goblins hobbling around the globe when you enjoy these pretzel-like baked treats. At least they can’t run very fast!
RECIPE INGREDIENTS
1 1/2 cups lukewarm water
1 package instant yeast
1 tablespoon sugar
4 cups flour, plus extra for kneading
Nonstick spray
1 Henry’s Large Egg
1 tablespoon water
1/4 cup rosemary, dried
1 pound almonds
3 tablespoons kosher salt
Assortment of Henry’s Organic Mustards
DIRECTIONS
Preheat oven to 450 degrees F. Dissolve yeast in water according to the directions on package. Mix sugar into yeast mixture. Pour mixture into 3 cups of flour. Stir until combined, then work in last cup of flour. Knead dough for about 5 minutes. Divide dough in half. Shape dough into “toes” and place on baking sheet sprayed with nonstick spray.
Mix egg with water and brush over toes. Press almond at tip of toe for the toenail. Place individual rosemary needles on each toe to make the toes look hairy. Sprinkle with Kosher salt. Bake for 15 minutes.

 A Bad Move 
A fellow bought a new Mercedes and was out on an interstate road for a nice evening drive. The top was down, the breeze was blowing through his hair and he decided to open her up. As the needle jumped up to 80mph he suddenly saw a flashing red and blue light behind him.
      
      "There ain't no way they can catch a Mercedes," he thought to himself and opened her up further. The needle hit 90, 100 110 and finally 120 with the lights still behind him.
      
      "What am I doing?" he thought and pulled over.
      
      The cop came up to him, took his license without a word and examined it and the car. "I've had a tough shift and this is my last pull over. I don't feel like more paperwork so if you can give me an excuse for your driving that I haven't heard before you can go!"
      
      "Last week my wife ran off with a cop," the man said, "and I was afraid you were trying to give her back!" "Have a nice night", said the officer.

The Lord watches over you -
the Lord is your shade at your right hand. (Psalm 121:5)

Difficulties, as high as mountains, come rushing towards me. Strong waves dash against my heel. When the power of darkness focuses on me to attack my faith, I lift my eyes to the hills and ask the Lord for help. He speaks to me, "My strength is made perfect in the weakness of men." This is always a wonderful paradox. I therefore worship His way, with tears.
The greatest joy in my life is to be under the protection of the Holy Spirit, freely walking in and out between the gap of the lion's teeth. I am in the shelter of the right hand of the Almighty, so that the devil cannot touch me. With His grace I can have victory over strong winds and high waves, defeating the attacking enemy.
The Lord is our shade at our right hand. You see the shade when you walk in the light. When there are clouds you may not be able to see that shade clearly ... but it is still there ... because He watches over our lives. He will watch over our coming and going, both now and forever more.

Recipe of the day

 Baked Pumpkin Donuts:
In place of the icing, try sprinkling these swirly doughnuts with a mixture of 2 tablespoons granulated sugar and 1/2 teaspoon pumpkin pie spice before baking.
RECIPE INGREDIENTS
For the Doughnuts:
2 cups all-purpose flour
1/2 cup packed brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup canned pumpkin
2 eggs
1/4 cup milk
1/4 cup shortening, butter, or margarine, softened
For the Icing:
1 cup sifted powdered sugar
1/4 teaspoon vanilla
3-4 teaspoons milk

DIRECTIONS
FOR THE DOUGHNUTS:
In a medium mixing bowl stir together flour, brown sugar, baking powder, pumpkin pie spice, salt, and baking soda. Add pumpkin, eggs, milk, and shortening, butter, or margarine; beat with an electric mixer on low speed till mixed.


Spoon the mixture into a pastry bag fitted with a large star tip with a 1/2-inch opening. Pipe onto 2 greased baking sheets in 3-inch circles. Bake in a preheated 375 degrees F oven for 10 minutes, or till golden brown. Cool doughnuts on a rack over waxed paper.

FOR THE ICING:
In a small mixing bowl stir together powdered sugar and vanilla. Stir in enough milk to make a smooth icing of glazing consistency. Spoon icing over doughnuts.
