Recipe of the day

Yucatan Style Fish Ceviche
This is very low carb and low fat. But it's quite tasty.

1 1/2 pounds White Fish Fillets ; - Halibut, Cod or Sea Bass
3/4 pound Large Shrimp ; 16-24 Count
1 large Sweet Onion ; - Vidalia, Maui or Walla Walla
3 medium Habanero peppers
1 cup Fresh Lime Juice
1/2 cup Fresh Orange Juice
1/4 cup Cilantro ; - chopped
1/2 cup Tomato ; - seeded and diced
-= Instructions =-
Cut the fish in 1/4-inch slices; remove any bones as you go. Place the fish in a glass or glazed ceramic dish large enough to hold it in one layer. Shell and devein the shrimp, rinsing them only if necessary to rid them of grit. Slice the shrimp in half lengthwise or butterfly them. Layer the shrimp over the fish. Slice the onion in half lengthwise, then crosswise in thin slices. Layer the onion over the fish and shrimp.
Toast the habaneros for 3-5 minutes in a dry skillet to release the oil from the cells. Wearing rubber gloves, stem, seed and sliver the Habaneros and scatter them over the onions.
Season the dish with salt and pour on the lime and orange juices. Cover and marinate in the refrigerator for 8 hours or overnight, or until the fish and shrimp are opaque. Pour off most of the marinade to reduce the carbs from the fruit juice.
Add cilantro and diced tomato, stir and serve at cool room temperature.

Recipe of the day

Crusty beef roll

1    cup chopped onion
1/2  cup chopped green pepper
3/4  lb. ground beef
1/2  cup fine bread crumbs
1/3  cup milk
1    tsp. salt
3/4  cup milk
2    cups packaged biscuit mix
     pepper
     tomato sauce

     Cook onion and green pepper in hot fat
until soft.  Add ground beef and brown
slightly.  Add bread crumbs, salt and pepper
with 1/3 cup milk and mix thoroughly.  Add
3/4 cup milk to the biscuit mix and mix well.
Roll to 1/2 inch thickness.  spread with the
cooked meat mixture.  Roll and seal ends.
Bake in 400 degree oven for about 40 minutes.
Serve with hot tomato sauce.  Serves 6.

Ingredients
1 cup vegetable cocktail juice 1 to 2 packets sweetener
1 dash celery salt 1 dash Worcestershire sauce
2 drops Tabasco 1 lime wedge
1 cucumber spear for garnish
Directions
1. Combine all ingredients, except lime and cucumber, in an old-fashioned glass and stir well.
2. Squeeze lime wedge over mixture and add wedge to drink.
3. Stir and garnish to serve.

Scottish Shortbread
Ingredients
(A) 180g Butter, 40g Icing sugar, Zest of 1 lemon, finely grated
(B) 230g Flour, 30g Rice flour
Directions
1.Cream (A) till smooth and light, add in (B) and mix till well blended.
2.Roll it between 2 plastic sheets to 20cm in diameter.
3.Place into tray lined with baking paper. Pinch and flute the edge with fingers for decoration.
4.Score the top into even wedges.Prick all over with a fork.
5.Bake at 170 degree at the bottom rack of the oven for 25 minutes. Then move it up to the
    middle rack, continue to bake for another 10 minutes.
6.Cut into wedges where marked.
Tips
Rice flour can be replaced with cornflour.

Easy Carrot Cake Recipes


Ingredients
1 cup KRAFT Mayo Real Mayonnaise
1 pkg. (2-layer size) yellow cake mix
4 eggs
2-1/2 tsp. ground cinnamon
2 cups finely grated carrots
1/2 cup chopped Walnut Pieces

Directions
1.Beat mayo, cake mix, eggs, 1/4 cup water and cinnamon in large bowl with electric mixer on
    medium speed for 3 minutes. Stir in carrots and walnuts.
2. Pour into greased 13x9-inch baking pan.
3. Bake at 350 F for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool
    completely. Frost cake if desired.

Perfection salad

  2   3 oz. pkgs. lemon gelatin
1/2  cup sugar
1    tsp. salt
3    cups boiling water
1/2  cup vinegar
1    tsp. grated onion
2    cups fine shredded cabbage
1    cup fine chopped celery
1/4  cup green pepper, chopped
1/4  cup diced pimiento
1/3  cup sliced olives

     Dissolve gelatin, sugar and salt in boiling
water.  add vinegar and blend well.  Chill
until very thick, then fold in remaining
ingredients.  Pour into an 8x4 inch loaf pan.
Chill until firm.  Serve slices on lettuce and
top with mayonnaise.

¾ ounce grenadine syrup
Cracked or shaved ice (optional)
Directions
1. Add orange juice to glass and add grenadine.
2. Let syrup settle on the bottom or stir, as desired.
3. Add ice (optional) if desired.

¾ cup unsweetened pineapple juice
½ banana
2 to 3 packets of sweetener
1 teaspoon lime juice

3 to 4 ice cubes
Directions
1. Combine ingredients in blender.
2. Blend on high for 30 seconds, until smooth and creamy.
3. Pour into fancy glass and serve with straw.

Rocky road bars

4    4 1/2 oz. milk chocolate bars
1    pkg. hershey milk chocolate chips
3    cups tiny marshmallows
3/4  cup chopped walnuts

     Melt in double boiler, over hot, not boiling
water, the candy bars and chips.  Stir until
smooth and glossy.  Pour over the
marshmallows and nuts mixed in a large bowl
and mix very good, until all are coated.  Press
into a well buttered pan.  Cut when cool.  This
takes a long time to set so have patience.

Boston Fudge Cake with Fudge Sauce Recipe
Cake:
2 cups brown sugar
1/2 cup shortening
1 cup buttermilk
1 teaspoon vanilla
2 squares unsweetened chocolate, melted
3 eggs
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Fudge Sauce:
1 bar German chocolate
1/2 square unsweetened chocolate
1 stick butter
3 cups unsifted powdered sugar
1 2/3 cups evaporated milk
1 1/4 teaspoons vanilla extract
Directions
1.Preheat oven to 350 degrees F. Grease and flour a sheet pan.

2.To make the cake, cream together sugar, shortening; add buttermilk and vanilla. Add melted chocolate,
   and eggs, 1 at a time; beat for 2 minutes. Sift together dry ingredients, add to creamed mixture. Beat an
   additional 2 minutes. Pour into prepared sheet pan. Bake for 35 minutes.

3.To make the sauce, melt chocolate and butter in saucepan over very low heat. Stir in powdered sugar,
   alternately with evaporated milk, blending well. Bring to a boil over medium heat, stirring constantly. Cook
  and stir until mixture becomes thick and creamy, about 8 minutes. Stir in vanilla; serve warm over cake.

Recipe of the day

Oat Groat Pilaf


Yield: 8 servings
* pure oat products
6¼ cups Boiling water 500 ml
2½ cups Whole oat groats * 625 ml
¼ cup Butter 60 ml
½ cup Onions, mince 125 ml
¼ cup Almonds, blanched, slivered 60 ml
2 tbsp Rosemary, fresh or 30 ml
2 or
2 tsp Rosemary, dried 10 ml
2 Tomatoes, medium, chopped 2
2 cups Frozen peas, cooked 500 ml
½ tsp Salt 2.5 ml
1 tsp Pepper 5 ml
Boil water, add oat groats. Turn off heat, cover
and let sit for 30 minutes. Return to heat and
bring to a rapid boil and then simmer until
tender about 35-45 minutes. There should be
enough water but check after 15 minutes of
cooking and add ½ cup more if needed.
Melt butter in frying pan, add almonds and
sauté until golden coloured, add onions and
cook until transparent.
Add cooked oat groats, fresh or dried rosemary,
tomatoes and cooked peas. Add salt and
pepper to taste. Serve warm as a side dish for a
hot meal or cool and serve cold as a salad.
Each serving has 50 grams of oats.

Steak durango

1     large sirloin
1/4   lb. butter or margarine
1/2   cup red wine
1     tbsp msg powder
1     tbsp worcestershire sauce
1     tbsp. chili powder
1     tbsp. garlic salt
      juice of lemon
      salt and pepper

     Melt butter and mix in all the other
ingredients except the steak.  When well
blended place the steak in a shallow pan
and coat both sides with sauce.  Allow to
marinate for 1 hour.  Broil to taste.  During
broiling which should be slow, baste with
the marinade several times.

Minty Hot Cocoa Recipe:
Ingredients
One 10-oz. serving, 102 calories

2 tsp. unsweetened cocoa powder
1-2 packets sugar substitute (to desired sweetness)
Dash of salt
1 cup skim milk
1/2 tsp. vanilla extract
1/2 tsp. peppermint extract
Directions
1. Mix cocoa, sugar substitute and salt in a large mug.
2. Heat milk in the microwave for 1 minute or until hot.
    Slowly add the hot milk to the cocoa mixture in the
    mug, stirring until well blended.
3. Stir in vanilla and peppermint.

Recipe of the day

Lentil Dahl Recipe:
This is an easy side dish.

Ingredients
400g red or green lentils
1/2 tsp turmeric
1 tsp mixed spice
2 tsp cumin seeds
2 tsp coriander seeds
1–2 tsp curry powder
30g fresh mint, chopped
30g fresh coriander, chopped
salt and freshly ground black pepper
1 lemon, juice only
140g Greek yoghurt


Directions
1. Place the lentils and spices in a pan and gently heat.
2. When the lentils are very soft, add the fresh herbs, lemon juice and black pepper.
3. Serve as an accompaniment to a curry or with naan bread. Serve with yoghurt.
