Recipe of the day

N'Orlins Zesty Chicken & Dip:

Malt Marinade:
1-1/4 pounds boneless skinless chicken, cut into strips
1/3 cup malt vinegar
1/3 cup brown sugar
2 tablespoons soy sauce


Pecan Breading
3/4 cup chopped pecans
1/4 cup breadcrumbs
2-3 teaspoons cajun seasoning

Tangy Dip
1 cup apricot jam
2 tablespoons malt vinegar
1 teaspoon cajun seasoning

Place chicken in a bowl or sealable plastic bag. Combine malt vinegar, brown sugar & soy sauce in a small bowl, stir well. Pour over chicken & toss to coat. Refrigerate 30-40 minutes. Preheat oven to 400 degrees. Spray pan with cooking spary. Combine pecans breadcrumbs, & cajun seasoning in a bowl, mix well. Drain chicken. Coat chicken pieces each with breading & place close together on tray. Spray chicken lightly with cooking spray. Bake 20 minutes.

For Dip: stir together jam, malt vinegar, & cajun seasoning. Serve with chicken.

Recipe of the day

Berry Baked Apples:
3/4 cup strawberryor rasberry, or blackberry, etc.,  jam or preserves
1/2 cup brown sugar
1/4 cup balsamic vinegar
3 tablespoons butter
1/8 teaspoon nutmeg
6-8 medium apples

Preheat oven to 375,  in a small saucepan, stir together preserves, brown sugar, vinegar, butter & nutmeg. Cook over medium heat until butter is melted. Continue to cook 10 minutes more, stirring occasionally.
Core apples & place in a baking dish & spoon sauce over each apple. Bake uncovered 35 minutes. remove from oven & baste apples with remaing sauce, from the bottom of dish, bake an additional 10 minutes.

Recipe of the day

Veggies Italian Style:
2 to 4 cups brocolli florets
1/2 cup virgin olive oil
1/4 cup white wine vinegar
2 tablespoons chopped parsley
2 tablespoons chopped basil
2 teaspoons brown sugar
1/2 tsp salt
1 small clove garlic, minced

Put brocolli in the microwave, add 2-3 tablespoons water in dish, cover & cook on high 2-3 minutes. remove cover & immediately fill bowl with ice. Add water to the top of bowl, set aside.
In a seperate bowl, combine remaining ingrediants, whick to dissolve sugar & salt. Drain brocolli into colander, transfer to serving dish. Drizzle with other ingredients & stir to coat.

Word of the Day

History often remembers people because of a defining moment that took place in their life. There are good defining moments and bad defining moments. September 11, 2001 was a bad defining moment for the United States of America. Many people's lives were changed as a result. Israel had a defining moment when they crossed the Jordan River and stepped onto the Promised Land. Moses had a defining moment when he parted the Red Sea with his staff. We could go on.
How would you like to be remembered? Is there a defining moment in your life with which others will associate your name? Thomas, one of the disciples of Jesus is remembered as "Doubting Thomas." What a shame. I wonder what other good things Thomas did. However, because Thomas doubted that Jesus had truly come back from the dead and needed Jesus to show the nail marks in his hands and side, he will forever be associated with this question posed to the Savior when He saw Him after he was resurrected.
For most of us we can still define our moments for the future. God may yet have a defining moment when you will discover something new or see the work of God in your life in a unique way. I think God likes defining moments. He wants you to have an experience with Him that is memorable.
Make a commitment to the Lord today to allow your defining moment to be one that has a positive faith experience, not a regret.

Recipe of the day

Sloppy Joes:
1/3 cup ketchup
1 can diced tomatoes
1 tsp chili powder
1/3 cup red wine vinegar
3 tabls brown sugar
1 lb ground beef
1 med onion, chopped
2 stalks celery, chopped
1 green pepper, chopped
3 cloves garlic, chopped
1 tsp oregano
1/2 tsp salt

In a medium bowl, combine tomatoes, red wine vinegar, ketchup, & brown sugar. Stir to dissolve suger, set aside.
In a large skillet, combine ground beef, with remaining ingredients. Cook over high heat 8-10 minutes. Stir in tomatoe mixture. Reduce heat to medium & cook, uncovered 12-15 minutes, stirring occasionally.

Many of us are familiar with the story of the Prodigal Son. But how about the story of the Prodigal Pig? That is in the Bible too:
For it would have been better for them not to have known the way of righteousness, than having known it, to turn from the holy commandment delivered to them. But it has happened to them according to the true proverb: "A dog returns to his own vomit," and, "a sow, having washed, to her wallowing in the mire." (2 Peter 2:21-22)
There are many reasons I know the Bible is true, and two of them are in the above passage. I have watched a dog return to its own vomit. If you have ever owned a dog, then you probably have too. As for pigs you can take them, dress them up, and even spray perfume on them. But the first chance they get, they will make a beeline to the mud. Why? Because a pig is a pig.
So when a person claims to be a Christian, here is how to know whether he or she really is a follower of Jesus Christ. Believers, even when they go astray, always will return to God. However, nonbelievers won't. Writing on this matter, the apostle John said, "They went out from us, but they were not of us; for if they had been of us, they would have continued with us; but they went out that they might be made manifest, that none of them were of us" (1 John 2:19).
So when we look at people who seem as though they have fallen away from the Lord, and we wonder whether they have lost their salvation, I suggest the possibility they were not even saved to begin with. Because the true test is where you end up.

      9) Tuesday at 4:00 P.M. there will be an ice cream social. All ladies giving milk will please come early.
      10) Wednesday the ladies liturgy will meet. Mrs. Johnson will sing "Put me in my little bed" accompanied by the pastor.
      11) Thursday at 5:00 PM there will be a meeting of the Little Mother's Club. All ladies wishing to become "Little Mothers" will meet with the Pastor in his study.
      12) This being Easter Sunday, we will ask Mrs. Lewis to come forward and lay an egg on the altar.
      13) The service will close with "Little Drops of Water." One of the ladies will start quietly and the rest of the congregation will join in.

Slow cooker chicken chow mein::

8 boneless skinless chicken thighs (about 1 1/2 lb)
1 tablespoon vegetable oil
2 medium carrots, sliced diagonally (1 cup)
2 medium stalks celery, coarsely chopped (1 cup)
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (8 oz) sliced water chestnuts, drained
1 cup Progresso® chicken broth (from 32-oz carton)
2 tablespoons soy sauce
1/2 teaspoon finely chopped gingerroot
2 tablespoons cornstarch
3 tablespoons cold water
1 cup sliced fresh mushrooms (3 oz)
1 cup snow (Chinese) pea pods
Chow mein noodles, if desired

  1. Remove fat from chicken. Cut chicken into 1-inch pieces. In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil about 5 minutes, turning once, until brown.
  2. In 3 1/2- to 6-quart slow cooker, place carrots, celery, onion, garlic and water chestnuts. Add chicken. In small bowl, mix broth, soy sauce and gingerroot; pour over chicken.
  3. Cover and cook on Low heat setting 6 to 8 hours.

Over the last three decades, people in the West have begun to sense that there is more to life than science has revealed and their senses have experienced--and, of course, they're right. On the surface this new hunger may sound encouraging to those of us with a Christian worldview, but in fact the same people who are disillusioned with the materialistic world are also disillusioned with established religion. Instead of turning to Christ and His church, they are filling their spiritual void with old-fashioned occultism dressed in the modern garb of parapsychology, holistic health, Eastern mysticism and numerous cults marching under the banner of the New Age Movement.
Attempting to meet spiritual needs apart from God is nothing new. Christ encountered a secularized form of Judaism during His earthly ministry which was bound to its traditions instead of to the God of Abraham, Isaac and Jacob. The religious leaders of the day didn't recognize the Messiah as their spiritual deliverer. They perceived the oppressor to be Rome, not Satan, the god of this world. But Jesus came to undo the works of Satan (1 John 3:8), not Caesar.
Satan's ultimate lie is that you are capable of being the god of your own life, and his ultimate bondage is getting you to live as though his lie is true. Satan is out to usurp God's place in your life. And whenever you live independently of God, focusing on yourself instead of the cross, preferring material and temporal values to spiritual and eternal values, he has succeeded. The world's solution to this conflict of identity is to inflate the ego while denying God the opportunity to take His rightful place as Lord. Satan couldn't be more pleased--that was his plan from the beginning.
Prayer: Mighty God, I renounce any inclination within me that I am capable of being the god of my life. You alone are Lord and King.

Recipe of the day

Watermelon Salsa:

  • 3 cups finely diced seedless watermelon, (about 2 1/4 pounds with the rind) (see Tip)
  • 2 jalapeno peppers, seeded and minced (see Ingredient note)
  • 1/3 cup chopped cilantro, (about 1/2 bunch)
  • 1/4 cup lime juice
  • 1/4 cup minced red onion, (about 1/2 small)
  • 1/4 teaspoon salt, or to taste

Preparation:

  1. Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl; stir well to combine. Season with salt. Serve at room temperature or chilled.

Recipe of the day

Maple orange Mashed Potatoes:

Ingredients

4 tablespoons unsalted butter , cut into 4 pieces
2 tablespoons heavy cream
1/2 teaspoon table salt
1 teaspoon granulated sugar
2 pounds sweet potatoes (about 2 large or 3 medium-small potatoes), peeled, quartered lengthwise, and cut crosswise into 1/4-inch-thick slices

pinch ground black pepper
2 tablespoons maple syrup
1/2 teaspoon grated orange zest

Instructions

  1. 1. Combine butter, cream, salt, sugar, and sweet potatoes in 3 to 4 quart saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork, 35 to 45 minutes.
  2. 2. Off heat, mash sweet potatoes in saucepan with potato masher, or transfer mixture to hopper of food mill and process into warmed serving bowl. Stir in pepper, maple syrup, and orange zest; serve immediately.

Recipe of the day

Sunday Morning Pancakes
  • 1 cup spelt flour or whole wheat pastry flour
  • 1/2 cup unbleached white flour
  • 1/2 cup brown rice flour
  • 1/4 cup ground flaxseeds
  • 1 pinch sea salt
  • 2 tsp. baking powder
  • 1 cup almond milk or rice milk
  • 3 free-range eggs , separated
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla extract
  • 1 small container fresh raspberries or blueberries
Directions
Combine the flour, flaxseeds, salt and baking powder in a mixing bowl.

Whisk together the almond milk, 1/2 cup of water, egg yolks, maple syrup and vanilla, and add to the flour, mixing well.

Whisk the egg whites until they form stiff peaks and gently fold them into the pancake mix. If you like, you can add the berries to the pancake mixture or you could serve them on the side. (I prefer not to cook raspberries.)

Spray or drizzle your pancake pan with olive oil, coconut oil or butter, and drop or pour the pancake batter into the pan, making whatever size pancake you wish. Allow to cook for a couple of minutes before turning over to cook the other side. You can peek under the pancake by lifting the edge with a spatula to see if it's nicely browned before turning.

Serve drizzled with extra flax oil or veggie butter and extra maple syrup.


Variations:
  • In place of flaxseeds, you can add other ground or chopped nuts or seeds such as ground almonds, hazelnuts, pecans, pumpkin or hemp seeds.
  • If you don't eat eggs, you can use the flaxseed egg substitute (see my gluten post), or just omit them and add another 1/2 cup of rice or almond milk. They will be a bit more dense, as the egg white lightens them up, but still delicious.
  • Other fruits can be added such as strawberries, chopped banana or pieces of lightly stewed apple or pear.
  • For a special treat, you can top with some whipped cream or natural yogurt.
  • You can make a gluten-free version by substituting a mixture of 1/2 cup tapioca flour, 1 cup rice flour and 1/2 cup ground almonds or other nuts.

Ahhhhhhhhh,,,fall, my favorite season. The leaves turning their bright colors, the nice, crisp, clean air, letting us know that winter is on it's way...I just love it. I love to take pictures of the beautiful trees, and their leaves..there is not any better season, in my opinion.

Recipe of the day

Pumpkin Applesauce Muffins
  • 1 1/2 tablespoons melted butter or cooking spray
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon salt
  • 8 tablespoons unsalted butter , softened
  • 2 cups sugar
  • 4 large eggs
  • 1 cup applesauce
  • 1 cup canned mashed pumpkin
  • 1 teaspoon vanilla extract
  • 2/3 cup apple juice or cider or orange juice
  • 1 1/2 cups raisins
Directions
Preheat oven to 375°F. Grease 12 half-cup muffin cups with melted butter. In a medium bowl, combine flour, baking soda, baking powder, cinnamon, cloves, nutmeg, and salt; set aside.

In a large mixing bowl, beat butter and sugar until creamy, 2 to 3 minutes. Beat in eggs, applesauce, pumpkin, and vanilla until blended. Add dry ingredients, alternating with the juice, beginning and ending with the dry mixture; mix until smooth. Fold in raisins.

Spoon batter into prepared muffin cups, filling each cup two-thirds full. Bake on the center oven rack until a toothpick inserted in the center of each muffin comes out clean, 20 to 25 minutes. Remove from oven and allow muffins to cool in the pans several minutes; turn muffins out onto a rack. Serve muffins warm or at room temperature. Repeat steps 1 through 3 with remaining batter.

Devotion:
It seems you can hardly turn anywhere today without seeing reminders of economic hardships.  During the past couple of years the unemployment rate in our country has been the highest we've seen in 60 years. Friends and family members are suffering due to the loss of jobs, investments gone bad, and cutbacks that seem to be everywhere.

Whenever I face situations I am having a hard time understanding, I have to park my mind with what I know to be true.  Keeping my mind saturated with truth, keeps Satan from being able to whisper dangerous assumptions, false accusations, and faith-eroding perspectives.

So, what is true in this situation?  What is true no matter what situation we are facing?

God is a good provider. 

This is true. This is where I must park my mind.  This is the reality that must saturate my thoughts.  This truth rises above our troubling circumstances and calls us to see life from a perspective outside our screaming realities.

God richly provides us with everything we need. 
The Bible tells us in Philippians 4:8-9 that if we think on what is true, the peace of God will be with us.  And ultimately, isn't peace what we want?  
Praise God, His peace is but an utterance of truth away.  So,  park your mind with His truth today.  And watch God's perfect provision of peace flood whatever dry and lacking ache you are experiencing right now.

Dear Lord, thank You for being my provider each day. Help me not to fear these times of hardship. Rather, help me to trust in You and Your ways more each day. My desire is to focus on what is true and believe that You will make the rough places smooth.  In Jesus' Name, Amen.

Mildred, the church gossip and self-appointed arbiter of the church's morals, kept sticking her nose in the other members' private lives. Church members were unappreciative of her activities, but feared her enough to maintain their silence.
      
      She made a mistake, however, when she accused George, a new member, of being an alcoholic after she saw his pickup truck parked in front of the town's only bar one afternoon.
      
      She commented to George and others that everyone seeing it there would know what he was doing.
      
      George, a man of few words, stared at her for a moment and just walked away. He didn't explain, defend, or deny; he said nothing.
      
      Later that evening, George quietly parked his pickup in front of Mildred's house... and left it there all night!

Cranberry, Apple, Coffee cake:

RECIPE INGREDIENTS
For the Topping:
1/2 cup packed light brown sugar
1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1 1/2 cups cranberries, fresh or frozen, thawed, chopped (see Tip)
1 1/2 cups finely chopped peeled tart apple, such as Granny Smith (about 1 large)
1/2 cup cranberry juice cocktail, orange juice or apple juice
For the Cake:
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup canola oil
3 tablespoons butter, slightly softened
3/4 teaspoon freshly grated lemon zest
3/4 cup granulated sugar, plus 1 tablespoon for sprinkling
1 large egg
3/4 cup low-fat milk
2 teaspoons vanilla extract

Kitchen tip
To make quick work of chopping cranberries, place whole berries in a food processor and pulse a few times until the berries are coarsely chopped.

Kitchen note
A nonreactive pan—stainless steel, enamel-coated or glass—is necessary when cooking acidic foods, such as cranberries, to prevent the food from reacting with the pan. Reactive pans, such as aluminum and cast-iron, can impart an off color and/or off flavor in acidic foods.

DIRECTIONS
Preheat oven to 375 degrees F. Coat a 9-inch springform pan with cooking spray.
To prepare topping: Whisk brown sugar, cornstarch and cinnamon in a medium nonreactive saucepan (see Kitchen note) until combined. Stir in cranberries, apple and juice. Bring the mixture to a boil over medium-high heat, stirring. Continue to cook, stirring, until the mixture thickens and the berries soften, about 2 minutes. Remove from the heat and let cool.
To prepare cake: Whisk all-purpose flour, whole-wheat flour, baking powder, salt and baking soda in a medium bowl.
Beat oil, butter and lemon zest in a large mixing bowl with an electric mixer, first on medium speed, then on medium-high, until well combined, about 11/2 minutes. Gradually add 3/4 cup sugar, beating until the mixture is light in color and well blended. Add egg and beat until the batter is smooth, about 1 minute longer. With the mixer on low speed, beat in half the flour mixture until just incorporated. Gradually beat in milk and vanilla until just incorporated. Add the remaining flour mixture and beat until a smooth batter forms, about 1 minute, scraping down the sides of the bowl as needed.
Scrape the batter into the prepared pan, spreading to the edges. Spread the topping in an even layer over the batter; do not stir.
Bake the cake on the middle rack until the top is puffed in places and a toothpick inserted in the center comes out clean (the fruit topping will still be moist), 40 to 50 minutes. Sprinkle the remaining 1 tablespoon sugar over the top. Transfer the pan to a wire rack; let stand until cooled to warm, about 20 minutes. To serve, run a knife along the edge of the pan, remove the pan sides and cut the cake into wedges.

Recipe of the day

Potato, Brocolli, & sausage skillet: 2 cups water
2/3 cup milk
2 tablespoons margarine or butter
1 box (4.9 oz) Betty Crocker® scalloped potatoes
2 cups sliced fully cooked reduced-fat Polska-kielbasa sausage (from 1-lb ring)
1/2 cup Old El Paso® Thick ‘n Chunky salsa (any variety)
2 cups Green Giant® Select® frozen broccoli florets
  1. In 12-inch skillet or 3-quart saucepan, heat water, milk and margarine to boiling. Stir in contents of uncooked potatoes and sauce mix pouches (from potato mix box). Add sausage and salsa; stir until well mixed. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
  2. Stir in broccoli. Cover; cook 8 minutes longer or until potatoes and broccoli are tender (sauce will thicken as it stands).
