Brownie bowl

1 box fudge brownie mix
Water, vegetable oil and egg as called for on brownie mix box
2 cups (1 pint) whipping cream
1/2 cup powdered sugar
1/2 teaspoon almond extract
1 can (21 oz) cherry pie filling or any fruit pie filling
1/2 teaspoon almond extract
2 tablespoons toasted sliced almonds
1. Heat oven to 350° F (325° F for dark or nonstick pan). Make brownies as directed. Cool completely.
2. In medium bowl, beat whipping cream, powdered sugar, and 1/2 teaspoon almond extract with electric mixer on high speed until stiff peaks form. In small bowl, combine pie filling and 1/2 teaspoon almond extract.
3. Cut brownies into 1-inch pieces. In 3-quart glass bowl, layer half of the brownies; top with cherry pie filling and half of the whipped cream. Top with remaining brownies and whipped topping; sprinkle with almonds. Cover; refrigerate at least 2 hours but no longer than 24 hours before serving. Store covered in refrigerator.

So, it's a good thing to read our word daily and pray, but it also helps to have uplifting words like these, as well as positive music. There are SO many good christian bands out there now! Alot more than when I was growing up. I think satan tried to 'use' music, well, he still does, but God's taking it back!!

Cristo sandwich
NGREDIENTS
Loaf
2 cans (8 oz each) refrigerated crescent dinner rolls or 2 cans (8 oz each) Crescent Recipe Creations flaky dough sheet
2 tablespoons Butter, melted
2 tablespoons honey
6 oz thinly sliced smoked cooked turkey breast
6 oz medium sliced muenster cheese
6 oz thinly sliced cooked ham
1/3 to 1/2 cup Red Raspberry PreservesTopping
2 tablespoons honey
1 tablespoon sesame seed
DIRECTIONS
1. Heat oven to 375°F. Separate or cut dough into 4 long rectangles. Place rectangles crosswise on 1 large or 2 small ungreased cookie sheets (rectangles should not touch); if using crescent dough, firmly press perforations to seal. In small bowl, mix butter and 2 tablespoons honey. Brush over dough.
2. Bake 8 to 12 minutes or until light golden brown; cool 15 minutes.
3. Grease 15x10x1-inch pan. Carefully place 1 crust on pan. Top evenly with turkey. Place second crust over turkey; top with cheese and ham. Place third crust over ham; spread evenly with preserves. Top with fourth crust; brush top with 2 tablespoons honey. Sprinkle honey with sesame seed.
4. Bake 10 to 15 minutes or until crust is deep golden brown and loaf is hot. Let stand 5 minutes. Cut into 8 slices.

Book Club
I gotta tell ya, I wasn't looking forward to yesterday's trip to the DMV,BUT, I gotta say, it ended very well! I ended up going to a local car dealership here, that also has a DMV inside it and I was literally out in three minutes! I'm NOT kidding! I have to say, I was stunned myself! So, I know where I'm going from now on. :-)
I'm still writing my memoirs, and they will be published soon, but after some requests, I have decided to publish a book of my poems first. It seems that I have been asked to do a couple of projects, so I'm trying to get them all done, soon, I hope. I have also decided to start a "book of the month" club on here, and my website:

An old Friend
So lately, me & my Husband have joined Facebook & Twitter, & I gotta tell ya, I think it's pretty fun. I used to hate the thought of 'social-networking', but I have been able to be in contact with some old friends that I never thought I'd ever talk to again. & I think it's neat as well seeing how they've changed, pictures of their families, etc.
So one of my friends, I found out, is an Author as well, so I thought I would use this blog today to 'plug' his book. It's based on his life, & I think it's a pretty worthy read! I have added his link. Go check it out! :

Irish Potatoes
Okay, well since I'm part IrisI guess I should addd some irish recipes. & we Irish LOVE our potatoes! ;-) Enjoy!
Ingredients
* 1 pound raw potatoes
* 1 medium onion, peeled and finely chopped
* 3/4 cup flour
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 1 egg
* 1/2 cup milk
* 1/2 cup vegetable oil
Instructions
1. Set half of the potatoes aside. Cut remaining potatoes into large chunks and place in a large saucepan. Cover with cold water and bring to a boil over high heat. Reduce heat to low and cook 15 to 20 minutes, or until potatoes are tender. Drain and place in a large bowl. Mash with a potato masher or electric mixer; set aside.
2. Grate the reserved potatoes and stir into the mashed potatoes. Add onion, flour, salt, and pepper; mix until well combined. Stir in egg and milk to form a batter.
3. In a large skillet, heat vegetable oil over medium-high heat. Drop batter by tablespoonfuls into the hot oil, and cook 3 to 4 minutes on each side. Drain on a paper towel-lined platter.
Yields 20 to 24 griddle cakes.

Sunday
Well, today was a REALLY hot day! WOW!!! I think it went into the 100's!!! We went to the local flea market today. I like to go their because you can find some really cool stuff once in a while. For those of you who don't know what a 'flea market' is, it's like an huge yard sale. There are rows upon rows of items. Today was so hot though, I couldn't really enjoy myself there like I usually do. I did however see one of my doctors. The one who actually delivered my son, so it was cool for her to actually see him all grown up, as she put it.
I thought it was kind of neat,too. I asked her if she ever got to see alot of the children she's delivered, & she said not really. ;-( I think that's sad. She says she'll see someone on the street, & think that maybe they were a child she delivered, but she doesn't want to go up & ask. I just thought that maybe it would be a cool idea for people to maybe send a picture in to their Doctors once in a while. I think they would appreciate it, I know she said she would. I just thought that was maybe something for you to think about.

Layered Italian Sandwich
1 round focaccia bread (about 8 inches in diameter)
1 container (7 ounces) refrigerated basil pesto
4 ounces sliced hard salami
6 lettuce leaves
4 plum (Roma) tomatoes, sliced
6 ounces thinly sliced smoked turkey
4 ounces sliced provolone cheese
Serve with:
Layered Gazpacho Salad Layered Gazpacho Salad
Total Time: 1 hour 15 min
1. Cut focaccia horizontally in half. Spread pesto on both cut sides of focaccia.
2. Layer salami, lettuce, tomatoes, turkey and cheese on bottom of focaccia; add top of focaccia. Wrap in plastic wrap and refrigerate at least 1 hour to blend flavors. Cut into 6 wedges.

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs
1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4. Bake about 25 minutes or until knife inserted in center comes out clean.

Decided on which one
Well, for those of you who keep asking and want to know, I've finally decided on which book to finish(took me long enough,huh?). I'll do my memoirs. I guess I've been asked to alot because "Coma" got you all interested since it was based on my life....anyway, that's the one I'm going to focus on next, which means I now have to make myself finish it...lol...it's NOT that I don't like writing, I love writing, just not about myself! But, because of so many requests, I figured I would go ahead. Not that it's going to be all 'pretty', be forewarned! But I do hope it helps someone out there who may have or be going through some of the same things & know that I came out okay....that's my wish, that this might help someone..okay, time to write!!!
Recipe:Easy Burgoo
This a one pot Cajun style dish:
This Cajun-style one-pot features both chicken and beef with gumbo-style vegetables in a meal your gang is sure to ask for again and again.
Serves: 6
Ingredients
* 1 (3- to 3-1/2-pound) chicken, cut into 8 pieces
* 2 pounds beef top round, cut into 1/2-inch cubes
* 3 (14.5-ounce) cans ready-to-use beef broth
* 1/4 teaspoon ground red pepper
* 2 (16-ounce) packages frozen vegetable gumbo mix, thawed
* 1 (10.75-ounce) can tomato puree
Instructions
1. In a soup pot, combine chicken, beef, broth, and pepper; bring to a boil over high heat.
2. Reduce heat to medium, cover loosely, and simmer 1-1/2 hours, stirring occasionally.
3. Add vegetable gumbo mix and tomato puree. Increase heat to medium-high and return to a boil. Let boil 35 to 40 minutes, or until thickened, stirring occasionally.

Booksignings
Okay, I have been asked this question over & over again, & I'm going to 'try' & answer as best I can....why don't I do booksignings?? Because, honestly, I don't want to....My Publisher & Agent hate me for it, by the way, but I am NOT a 'public' person! This,(the web), is about as 'public' as I'm ever going to be....& I'm only doing this because of my Publisher, Agent, & some Author Friends ideas on this subject, suggesting it...in their last attempts at getting me to 'get out there'!! Don't get me wrong, I will be more than happy to talk with you here, or facebook/twitter/via email, etc...etc..., as I have in the past on my old website & blog, & Myspace...but I just am not the type of person who can go out into the public eye & be around alot of people....call it 'stagefright' if you will....but unfortunately, that's me....sorry :-(...I don't mean to upset anyone, I never have, but I like my privacy. Ingredients

* 1/2 cup (1 stick) butter, melted
* 1 can (14 ounces) sweetened condensed milk
* 1 cup fresh sliced strawberries
* 1/3 cup frozen margarita mix concentrate, thawed (from a 6-ounce can)
* 2 cups whipped cream
Instructions
1. In a medium bowl, combine the pretzels and butter; mix well. Press the pretzel mixture over the bottom and sides of a 9-inch pie plate to form a crust; chill.
2. In another medium bowl, combine the sweetened condensed milk, strawberries, and margarita mix until well blended. Fold in the whipped cream until well combined.
3. Pour into the prepared pie crust, cover, and freeze for at least 4 hours, or until firm.

the monk was walking when he came apon a lion. the monk runs to an edge of a cliff,climbs down the cliff and hangs on to a root.the lion waits for him to climb back up he looks down and theres another lion waiting for him to fall.while hes hanging there he spots a brite red strawberry he picks the berry eats it and declares it delicious.
Puppy
Well, that didn't last too long, puppy got scared after about 10 minutes, had to bring her back in...she doesn't know what to make of grass...lol
What to do?
Well, I'm getting ready to take my dogs out to play for a while, since it's going to be another hot day today, which is bad for them & me....The 2 girls don't play much, but the boy, "Bingo" is 'ball crazy'!! & I think his little daughter, "Coco", needs to start spending some time outside since she's 6 weeks old now....she's so little she can't really make it off our porch, so I have to carry her...she 's so precious!!!

1/4 cup finely chopped onion
1/4 cup chopped fresh parsley
1/3 cup ranch dressing
1/4 teaspoon coarse ground pepper
4 slices (about 3/4 oz each) Cheddar or American cheese
4 whole-grain sandwich buns, split
12 dill pickle slices
DIRECTIONS
1. Heat closed medium-size contact grill for 5 minutes. In medium bowl, mix beef, onion, parsley, 3 tablespoons of the dressing and the pepper. Shape mixture into 4 patties, about 3/4 inch thick.
2. Place patties on grill. Close grill. Grill 4 to 6 minutes or until meat thermometer inserted in center of patties reads 160ºF and patties are no longer pink in center. Top each patty with cheese slice. Let stand on grill about 3 minutes or until cheese is melted.
3. Spread remaining ranch dressing on cut sides of buns. Place cheese-topped patties and pickles in buns.

Another Hot Day!!
I get So sick of hot weather!! UGH!! I feel like I can't breathe!! My Hubby, on the other hand, loves it....My fav seasons are spring & fall...I don't like to be too cold, or too hot...(sounds like The 3 bears story, huh? lol ) Well, when it's like this, I just don't feel like going outside, (bad for my dogs), or doing too much of anything. I guess these are the days that are 'good' for me to write....if i'm stuck inside anyway, might as well do something, right???...nah....lol ;-)

Well, here's today's recipe: I think I'll go with: Tangy Basil Bean Salad:
2 cans 16 oz. kidney beans
1 can 16oz. lima beans
1 can sliced ripe olives,drained
1 1/2 cups sliced celery
1/2 cup sliced carrots
1/4 cup chopped parsley
1/2 cup red wine vinegar
1/3 cup olive oil
1 TBLspoon dijon mustard
2 tsp sugar
1 tsp basil
1/4 tsp onion powder
1/4 tsp pepper
1 clove garlic, minced
Drain & rinse kidney & lima beans. Mix all ingredients in bowl. Serve chilled. Enjoy!! :-)

Ice Mountain
my wife is a homebody that i love very much im trying to break her of this, me on the other hand am out going, well i wanted to tell about a special place called ice mountain its located in capon bridge west virginia when you ride in to this place the starting point its a little, creepy all the houses are abandoned, an old a ghost town except for a horse in a stable who seems to be angry as we sat waiting for our guide. we looked in the house at the starting of the trail there was furniture in it still but no life,(My wife told me she could see 2 ghosts in the window, & that was why the horse was upset) then our guide showed up she told us the house was haunted(which my wife had just told me!!) in the upper room the last people that lived there never let the kids go in the one room for that reason our guide was very pleasant and insightful. i didnt think we would be able to make the trip because angi's foot was hurting and she decided to wear flip flops the guide said she didnt want to med vac another person out of here which had happened just a few weeks earlier,but my brave wife pushed on. As we reached the top of the knoll, we saw
a flock of wild turkeys, our guide told us about the vegetation and how the native plants were being pushed out by the foreign ones like the plant that the state butterfly eats and makes cocoons. efforts are being made to stop this attack, as we walked on we saw some trees beavers had been chewing on a few trees but not the hemlock pines; these trees we found out were under attack too, and were getting treated. before going up we had to dust our selfs off first incase we were carring things harmful for the trees.as we approched the cold vents we started seeing the hemlocks the cold vents were very cooling on a hot day you want to stay for awhile. I expected it to be ice but the cool vents were nice, the guide told us its much colder a little deeper in; scientist have tryed to explain this but can not. the mountain was used by the indians as a freezer- it was sacred for them. This was an awesome & memorable experience, we're definately going back!!!

So, today, I'm just trying to stay cool!! It's like 93 degrees here!! UGH!! Thank God for AC!!! I've also been trying to write my autobiography, but I gotta tell Ya, it's not been easy for me today...you know sometimes you just don't want to remember!! My dog's daughter, "Coco" is 6 weeks old today & so cute!! She's playing up a storm with her daddy..Her Daddy"Bingo" pic & Her Mom "Ginger"& My Hubby..Also added a pic of "Coco" herself...I think she's going to look like "Daddy....I just love animals!! way TOO much I'm told, but, I can't help it!!!

Recipe of the day (sat june 19th)
Ok, so here's today's recipe of the day...enjoy!!
reggae salad
INGREDIENTS:
1 packet ELBOW MACARONI
1 medium sweet pepper
1 small onion
2 medium carrots
1 Tbs. SOFT MARGARINE
1 can GREEN PEAS
1 can WHOLE KERNEL CORN
¼ cup WHITE VINEGAR
¼ tsp. salt
¼ tsp. BLACK PEPPER
250 grams tastee cheese(you can also use parmesan, or any shredded cheese you have)
10 lettuce leaves
1 Tbs. vegetable oil
METHOD / DIRECTIONS:
Cook macaroni as directed on package and drain. Chop sweet pepper and onion and saute in hot margarine.
Cut carrots in strips, shred cheese and set aside.
Place macaroni in a bowl and add sauteed onion and sweet pepper, peas, whole kernel corn, carrots, vinegar, salt and pepper and mix well.
Add cheese and mix.
Serve on a bed of lettuce.

Daughter's Bday
Well, today is my middle daughter, Destiny's birthday...she's 19 today (ugh!! I feel SO old!! lol)...I went to visit her this morning for a little while...She's such a sweet person...have you ever just sat & watched your children??? I have, do, ALOT!! I used to do it all the time...just watching them is amazing, knowing that they are a part of you & that you helped to create that!! It's awesome!! Especially when they become adults & start their own lives, I think "I helped do this"...It's really cool, I think anyway, when you think about it like that....(Love you- :"Doodle Bug"!!)

The Puzzle Pieces
The joy in your touch, the light in your eyes, are just parts of a life that I thought I never could have, and still can't believe that I do. My life with you are all parts of the perfect pieces that make up the puzzle that is my life. Just as in a puzzle, it takes many pieces, some crooked, some straight, some square, to make a whole picture, so is my life with you. It may not be all perfect pieces, but when they are all joined, and put together, they make a perfect picture, a whole piece. A perfect puzzle.

It's just another way of God telling us to focus on 'good' things, think about the 'good' things, & not to let bad things cloud our mind...when you meditate on the good, there's no room for the bad....;-)

Okay, so each day I will try & post a new recipe, 1 of my favorites to share with you....some are my own, some have been borrowed...I just LOVE to cook, especially for my Husband(poor guy lol ;-).
So today, since it's a hot day here in Virginia, I will share a cool dessert recipe:: Okay, so here goes & I hope you enjoy!! ;-), Angel
mint ice cream squares:
INGREDIENTS
1/2 cup butter or margarine
1/4 cup unsweetened baking cocoa
2 cups coarsely crushed chocolate or regular graham crackers (about 20 cracker squares)
1/2 cup powdered sugar
1 carton (1/2 gallon) green mint chocolate chip ice cream, slightly softened
1 cup semisweet chocolate chips
2/3 cup whipping cream
16 thin rectangular creme de menthe chocolate candies, unwrapped
DIRECTIONS
1. In 2-quart saucepan, heat butter and cocoa over medium heat, stirring frequently, until butter is melted and mixture is well blended. Remove from heat. Stir in graham cracker crumbs and powdered sugar. In bottom of ungreased 13x9-inch pan, press mixture to form crust.
2. Place heaping spoonfuls of ice cream on crust. With back of spoon, lightly press and smooth ice cream. Freeze 30 minutes.
3. Meanwhile, in 1-quart saucepan, heat chocolate chips and whipping cream over low heat 2 to 3 minutes, stirring constantly, until melted. Cool 15 minutes.
4. Drizzle chocolate mixture over ice cream. Arrange candies on top so each serving has 1 candy. Freeze until firm, about 2 hours. Let stand at room temperature 10 minutes before cutting into squares.
High Altitude (3500-6500 ft): No change.

Hello Everyone! ;-) Today is friday, June 18th...I finally made a new website & blog since I've been asked to over & over & hadn't until now...(I'm too stubborn to be 'pushed' into anything) lol....so, here, I had the idea that my Husband (& He's my best friend as well), Joseph, could join me....I'll be posting something each day, thoughts, fav recipes, fav scriptures, maybe even a new poem, not daily, but weekly :-)....I've been trying for a year now to get a new book out, but I've started about 8 books, & I end up throwing them away...as they say, "You are your own worst critic"...that is so true...anyway...don't know what I'm going to do next...I would like to really take my time this time writing....not being pushed & hurried to make a deadline...where's the 'creativity' in that?? I think it's the worst!! Too much pressure!! So, that's what's going on for now....Join me on this daily journey......I think it will be fun!!,Angel
